Greek Broccoli Califlower Salad
Lots better than it sounds!!!

Ingredients
- 1 head Broccoli, finely chopped
- 1 head Califlower, finely chopped
- 1 Red onion, finely chopped
- 1 cup Cheddar cheese, grated
- 10 slices Bacon, cooked crispy and crumbled
Dressing
- 1 cup Mayonaise
- 1/2 cup Sugar
- 4 tablespoons Red Wine vinegar (apple cider vinegar can be used)
- 3 shakes Greek Seasoning
Instructions
- Mix all salad ingredients together.
- Mix dressing ingredients together and pour over salad. Toss well.
- Better if chilled before serving.

Ingredients
Dressing
- 2 cloves Garlic, minced
- 1/3 cup Olive oil
- 1/3 cup White wine vinegar
- 1 tablespoon Sugar
- 1/2 teaspoon Salt
- Pepper to taste
- 1/4-1/2 teaspoon Dry mustard-optional
Pecans
- 2 tablespoons Butter
- 1 cup Pecans
- 2 tablespoons Brown sugar
Salad
- 10-13 ounces Spinach
- 1 Pineapple, chopped into bite size pieces
- 6 ounces Feta cheese
Instructions
Dressing
- Combine all the dressing ingredients in jar of tupperware. Shake vigorously and set aside.
Pecans
- In small pan, heat the butter over medium-high heat. when hot add pecans and stir to coat. Add the brown sugar and stir again. Stir occasionally until sugar starts to caramelize, about 2-5 minutes. Remove to wax lined cookie sheet to cool. I've also used store bought toffee pecans.
Salad
- In large bowl add the spinach, pineapple and feta. Toss to combine. Sprinkle pecans over top and serve with salad dressing. Can toss with dressing before adding pecans.

Ingredients
- 1 package Pistachio pudding
- 1 medium can Crushed pineapple
- 1 small Cool Whip carton
- 1 cup Pecans, chopped
- 1-2 cups Marshmellows, small
Instructions
- Sprinkle pudding over pineapple and stir until dissolved.
- Mix in remaining ingredients. Chill until servivin.
