Grapefruit Loaf Cake

  • 1 9x5 Loaf pan

Ingredients
  

  • 2 Cups Flour, spooned and leveled
  • Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • 3 Large Eggs
  • ¾ Cup Buttermilk or Greek yogurt
  • 1 Cup Brown sugar
  • ½ Cup Vegetable oil
  • ¼ Cup Grapefruit juice, freshly squeezed, strained
  • Tablespoon Grapefruit zest
  • 1 Teaspoon Vanilla extract

Grapefruit syrup

  • ¼ Cup Confectioner sugar
  • ¼ Cup Grapefruit juice, strained

Instructions
 

  • Preheat oven to 350°. Prepare loaf pan, line with parchment paper or grease.
  • Whisk the flour, baking powder, and salt together in large bowl.
  • In medium bowl, whisk the eggs. Once beaten, whisk in the buttermilk, brown sugar, oil, grapefruit juice, zest, vanilla extract.
  • Pour wet ingredients into dry ingredients and mix until combined. Do not overmix.
  • Spread batter into loaf pan. Bake for 45-50 minutes. Cake is done when toothpick inserted in the center comes out clean. If browning to quickly cover with foil.
  • Mix syrup ingredients until sugar is dissolved. Add more juice if necessary.
  • Remove cake and poke with holes. Pour syrup over cake and return to oven for 5 minutes.
  • Allow to cool.

Notes

Freezes well for up to 3 months. 
You can omit syrup and put a glaze on the cooled cake.
For glaze mix: 1 cup confectioners' sugar, 2 tablespoon's grapefruit juice and 1/4 teaspoon vanilla extract. Mix well until sugar is dissolved. 
Can make into cupcakes. Make 12 cupcakes. Bake for 20 minutes.
